‘Every Culinary Artist Should Learn At This Spot’: Humble Turkish Restaurant Earns Fourth on Ranking of London’s Top Restaurants.

Whenever compiling a ranking of London’s finest eateries, one might anticipate familiar award-winning names. But, nestled high among these culinary giants is a modest salonu located in a distant part of northern London.

An Shocking Accolade

The small Turkish eatery, concentrating in the specialties of Mersin, a metropolis on Turkey’s Mediterranean coast, has been named the fourth top restaurant in the city by a respected culinary publication. The recognition has left the family completely astonished.

“I am utterly surprised,” says the family member, pointing to his parents’ hard graft that led to their humble restaurant earning such a high spot on a respected 99-strong list.

A Appeal of Modesty

The little venue, which was a basic cafe before its conversion into a popular food hotspot, has retained much of its original feel. It accommodates just more than 20 people and, beyond the vibrant live cooking show, the interior remains essentially unchanged. “It is a tiny and intimate spot,” comments the owner.

The Signature Offering: Tantuni

In the end, it is focused on the food, and this restaurant certainly delivers. The eatery’s signature dish, tantuni, is a straightforward pleasure. Choice of meat—lamb or lamb or chicken—is steamed to preserve a tender quality.

The meat is then tossed into a large pan with spices and oil, which are mixed in gradually. As the flavourful mixture heats through, homemade lavaş—a thin, flexible bread—is slapped on top to take in all the flavours. Thinly sliced onions and a sprinkling of parsley go inside before the flavourful meat is folded tightly inside.

It is typically consumed with a drop of lemon or some tangy accompaniments. The end result is a powerful punch of taste, with gentle hints of sumac, bold onions and spicy, paprika-laced oil tying it all in harmony.

Other Than the Basic Tantuni

There is also yoğurtlu tantuni, where the savoury lavaş is cut up and topped with yogurt, tomato sauce and rich, nutty brown butter. A respected food critic labelled this dish “a part of London’s few ideal, faultless dishes”.

For sweets, the eatery’s künefe is a treat. It is doused in lighter syrup than usual, giving it a deeper, nuttier and less sickly profile.

Outranking the Giants

Notably, this unassuming restaurant has ranked above several renowned three-Michelin-starred venues. It finds itself just behind the top of the list, trailing other notable dining destinations.

Whereas two people could readily leave the restaurant full for under £25, similar tasting menus at high-end establishments can cost many times that figure.

The Ethos of Warmth

The restaurant is also one of several Turkish restaurants included and is found well outside the city’s prime zones. “It is not about luxury. London is an costly city. It is assumption that in an expensive place you’re going to have the top service and best food but I do not believe in that,” says the owner.

“I believe what is crucial is friendliness, friendliness and somewhere you can be yourself and be calm.”

The view is shared by the list’s editor, who stated that if he were in a role of authority, he would “insist to make every chef in London visit this spot as a final lesson, to show them the traps of overcomplication, and to reveal what is achievable if you do only a handful of – or three – things to their utmost best”.

A Story of Dedication

Unlike most chefs heading kitchens in the list’s highest ranks, the head chef behind the food did not apprentice at elite establishments. “I feel really proud of our restaurant and our mum,” says her son.

Many restaurants require years to find their footing, but this eatery first launched seven years ago. Its success is owing to tireless, seven-day weeks of effort.

“My mum was very tired. She would source produce in the morning and create the food in the afternoon. Everything is handmade; she would do all of this. She is a solo parent and she managed a life outside work but her friends would support her to encourage her. She had children and a house to care for as well. All of these roles shaped her into what she is now: a exceptional person,” he reflects.

A Accomplishment for the Culture

The restaurant’s success is set to resonate beyond its own walls. “In my opinion numerous people would be pleased, as I am, because the Turkish community is a significant part of London,” notes the owner, emphasising the wider importance of this culinary achievement.
